Harvest Loaf Pumpkin Bread

Pumpkin bread is a fall favorite that is full of fall flavor! This easy-to-follow pumpkin bread recipe is perfect with a cup of coffee in the morning and makes a gorgeous dessert bread in this harvest loaf pan.

I am not a big fan of pumpkin spice or anything pumpkin to be honest. However, this pumpkin bread recipe is always a crowd-pleaser! I grew up watching my mother make loaves and loaves of the stuff for family gatherings, church events, gifts, you name it- the answer was always pumpkin bread.

KitchenAid does not sponsor us but this recipe should be since we burned up a mixer after a decade of making pumpkin bread! I was gifted a KitchenAid as a wedding present and now I am carrying on the tradition of baking the perfectly spiced dessert bread.

Mixing the Batter

There are two steps to making the batter for pumpkin bread.

Start by mixing vegetable oil with sugar. Add in the eggs and pumpkin puree.

Combine the dry ingredients as instructed in the recipe card. This will allow the pumpkin mixture to form a bread texture as it bakes. Slowly add in the dry mixture and allow it to mix on medium speed. Add water as needed. Verify that all of the flour has been incorporated so there are no lumps when the bread bakes.

The batter should be thick but easy to pour. Tip: pour into a pitcher or bowl with a pour spout for better control when pouring into pans.

Fill pans halfway for the perfect rise. Overfilling will result in a steep rise over the edge of the pans.

Pumpkin Bread Printable Recipe

Pumpkin Bread

Ingredients
  

  • 3 cups granulated sugar
  • 1 cup vegetable oil
  • 1 16oz can pumpkin
  • 4 eggs
  • ¾ cup water

Dry Ingredient Mix:

  • 3 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 ½ teapoons salt
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 4 teaspoons pumpkin pie spice

Instructions
 

  • Stir the vegetable oil into the sugar.
  • Add eggs and 16oz can of pumpkin.
  • Whisk the dry ingredients in a separate mixing bowl. Shovel in a few scoops of the mix at a time and alternate with adding the water as needed.
  • Pour into well greased loaf pan(s).

Bake at 350°-375° accordingly:

  • Large Loaf Pan: 60-75 minutes
  • Small Loaf Pan: 30-45 minutes
  • Mini Loaf Pan: 18-22 minutes

Notes

Sifting the dry ingredient mix together makes the combination better but whisking or stirring with a fork works fine.
Be sure to check the bread with a toothpick making sure it comes out clean all the way through! No batter should be on the toothpick.
Fill the Harvest Pan halfway. It is okay to level if it rises above the edges. Level the bread loaf; place a cooling rack or plate on top and flip. Let the loaf cool before cutting.
