Pumpkin Bread

Ingredients
  

  • 3 cups granulated sugar
  • 1 cup vegetable oil
  • 1 16oz can pumpkin
  • 4 eggs
  • ¾ cup water

Dry Ingredient Mix:

  • 3 ½ cups all purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 ½ teapoons salt
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 4 teaspoons pumpkin pie spice

Instructions
 

  • Stir the vegetable oil into the sugar.
  • Add eggs and 16oz can of pumpkin.
  • Whisk the dry ingredients in a separate mixing bowl. Shovel in a few scoops of the mix at a time and alternate with adding the water as needed.
  • Pour into well greased loaf pan(s).

Bake at 350°-375° accordingly:

  • Large Loaf Pan: 60-75 minutes
  • Small Loaf Pan: 30-45 minutes
  • Mini Loaf Pan: 18-22 minutes

Notes

Sifting the dry ingredient mix together makes the combination better but whisking or stirring with a fork works fine.
Be sure to check the bread with a toothpick making sure it comes out clean all the way through! No batter should be on the toothpick.
Fill the Harvest Pan halfway. It is okay to level if it rises above the edges. Level the bread loaf; place a cooling rack or plate on top and flip. Let the loaf cool before cutting.
